The Squash Will Rise Again! and Again! and Again!

Suddenly it's summer, and the squashes are coming in - in full force!  Wow, didn't think we'd have such prolific squash plants!

Now we need to get creative and start finding recipes for all this wonderful produce.  I needed a quick recipe - something that didn't need alot of attention and we could eat for a few days since life is a little hectic.

Here's what I made and I'm sure you all have a variation of it.  If you do, please send it it!


Chicken, Squash and Pasta Sauce -

1 bottle or can of your favorite pasta sauce
3 boneless, skinless chicken breasts - or 5 - 6  thighs,  or even with skin and bones if you like the added flavor (and fat)
3-4 summer squash, any variety will do.  I used the mexican grey squash
1 onion, diced
Assorted veggies like celery, tomatoes,  peppers, etc.   in case you have some lonely ones in the fridge, chopped.
1 bay leaf if you have it or some italian seasoning
Some salt and pepper to taste.

Get out your crock pot.  Add the sauce, rinse out the can/bottle with water and add to pot.  Chop boneless chicken pieces into about 1" sections or put the ones with bone in whole, cut  summer squash into 1" quarter  sections.  Add  rest of ingredients  into crockpot and cook on low for about 5-6 hours.   Remove bay leaf, bones and skin before serving.

Serve over rice or pasta.  Or eat plain like a stew/soup.  Even better the next day. Should serve 4-6 depending on amount of veggies you add and if you serve it over rice or pasta.

Easy, yummy, and pretty healthy.
