Chocolate Zucchini Bread

                                                               Chocolate Zucchini Bread
 
 
This recipe is from one of our customers at the Fresh 52 Farmers and Artisan Market at Tivoli Village on Saturdays.  She was so sweet to bring me a copy of it and it is delicious.
 
Here it is:
 
2 1/3 cups all purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspons baking soda
1/4 teaspoon baking powder
1/2 cup unsweented cocoa powder
1/2 cup chopped walnuts
1/2 cup mini chocolate chips
3 large eggs
1 cup vegetable oil
2 teaspoons vanilla extract
3 cups unpeeled, grated zucchini - about 1 pound



Preheat oven to 350 degrees.  In a large bowl, combine flour, sugar, salt, cinnamon, baking soda, baking powder, cocoa, walnuts and chocolate chips.  In a medium bowl, whisk eggs slightly, whisk in in oil and vanilla.  Stir in zucchini and add mixture to dry ingredients, mix thoroughly.  Pour into 2 lightly sprayed or oiled 4 1/2 x 8 1/2 x 2 1/2 loaf pans.  Bake until toothpick inserted into center comes out clean about 50-55 minutes.  Cool in pan on rack for 10 minutes.  Run knife around edges and remove from pans.  Wrap in foil and store (if it lasts that long!)
 
She made these variations to recipe - used 4 eggs and 4 cups of zucchini.
 
My variations - used regular sized semi-sweet chocolate chips, 4 cups zucchini, 1/2 cup oil and 1 6 oz. container of low-fat vanilla yogurt.
